Recipe: Spinach Artichoke Tortellini


This dish is my favorite to make. It's quick, easy and delicious! I normally serve it with salad and I sometimes make some garlic bread too.

If you're thinking, "I don't really like spinach or artichokes." At least give it a try! My husband's not huge fan of them either but he loves this dish!

Prep time - 10 minutes
Cook time - 20 minutes
Serves 4

Ingredients

1lb Package of Tortellini
1 cup of Heavy Whipping Cream
1/2 cup of grated Parmesan Cheese
4 slices of Bacon
1/3 to 1/2 cup of Quartered Marinated Artichoke Hearts (or about 5-6 quarter pieces)
1/2 to 3/4 cup of Cooked Chopped Spinach
1 tsp of Garlic Powder
Salt and Pepper to taste

All the ingredients
I like to use freshly ground black pepper, but feel free to use already ground pepper. Those are half slices of bacon pictured above. I use 8 of those half pieces. I like to to cut them in half and freeze them so they don't curl up so much when I cook them, so they will crisp all the way through.
It looks like a bunch of pots, but don't be intimidated!

Directions
First off, get a big pot of water on the stove and bring it to a rolling boil, so it will be ready for your tortellini later. Cook the spinach. (Fresh or frozen, it's up to you. I use frozen.) Cook the bacon until it's crispy. Tear up/chop the bacon. Chop the artichoke quarters. Grate the Parmesan cheese. (or use already grated Parmesan) Now, you should have all your ingredients ready to go! Take a small amount (about a tablespoon or so) of the bacon grease and put it into the large sauce pan. Add the heavy whipping cream and Parmesan. Sprinkle in garlic, salt and pepper. Heat the cream mixture on medium-low for about 5 min. Once it begins to thicken a little, add the bacon, artichokes and Spinach. Might be a good idea to add the tortellini to the boiling water at this point, but don't let the tortellini be done before you are ready to add it to the sauce. Let the sauce simmer on low heat for 5 to 10 min or until it looks like this.


Looks yummy right? Drain the tortellini and add it to the sauce. Mix until the tortellini is evenly coated with sauce. Add salt and pepper, if needed.


Just let all the flavors meld together like that for about 5 min or less on low heat. Serve immediately.
